Ingredients

  • 1 large butternut squash, peeled and cubed
  • 2 apples, peeled and chopped
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 tsp dried sage
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • 2 tbsp butter

Preparation

Roast squash and apples in the oven at 400°F for 25 minutes.

Sauté onion in butter, add roasted veggies and broth, simmer for 10 minutes.

Puree the mixture, stir in coconut milk and sage, and adjust seasoning.
