Cheeseburgers

Ingredients

  • 1 lb ground beef (80/20)
  • 1/4 cup yellow onion, diced
  • salt and pepper
  • 3 seeded (or not) hamburger buns
  • 3 slices of cheddar or american cheese
  • 2 tbsp butter, for toasting (optional)

Preparation

If you are using charcoal, get that started - the coals will warm as you prepare the patties.

To a medium bowl add the ground beef. Small-dice the onion and then add that to the bowl as well. Mix.

Prepare a tray (or plate or sheet pan) lined with parchment paper. Separate the ground beef into 3 parts, round them into a ball shape (don't overwork it), and then form them into patties that are 3/4 to 1 inch thick. Place each patty on the tray.

Using your palm, create an indentation (or dimple) in the middle of each patty. This will prevent them from puffing up in the center when the cook.

Season the tops of the patties with salt and pepper (or whatever spices you'd like to use).

Throw the patties on the grill when it is ready. Cook each side of the burger for about 2 1/2 minutes for medium, and 3 minutes for well. It's ok to flip the burger but be careful not to press it as this will release the fat and juices.

(Optional) Split the buns, butter the cut sides, and toast them cut-side down on a hot skillet, griddle, or grill for about 10 seconds to 1 minute.

Assemble the burgers by placing each in their own bun, adding ketchup, mustard, or whatever toppings you desire. Enjoy!
