Focaccia di Recco con Stracchino

Ingredients

  • 300g plain flour (type 00 if available)
  • 150ml warm water
  • 3 tablespoons extra virgin olive oil, plus more for brushing
  • 300g stracchino cheese (or crescenza)
  • Flaky sea salt
  • Pinch of salt for dough

Preparation

Mix flour, water, olive oil, and a pinch of salt into a smooth, elastic dough. Rest covered for 30 minutes.

Preheat oven to 250°C with a baking sheet inside.

Divide dough in half. Roll each piece paper-thin — you should almost see through it.

Lay one sheet on oiled parchment. Dot with spoonfuls of stracchino.

Cover with the second sheet, pressing edges to seal. Tear a few holes in the top for steam to escape.

Brush with olive oil and sprinkle with flaky salt.

Bake for 12-15 minutes until blistered and deeply golden. Cut into squares and serve immediately.
