Ingredients

  • 400g Arborio rice
  • 200ml tomato passata
  • 1 onion, finely diced
  • 50g butter
  • 800ml chicken broth
  • 100g Parmigiano-Reggiano, grated
  • 2 eggs, beaten
  • 150g mozzarella, cut into small sticks
  • 200g fine breadcrumbs
  • Vegetable oil for deep frying
  • Salt to taste

Preparation

Sauté onion in butter. Add rice and toast 2 minutes. Add passata, then broth in batches, stirring until absorbed. The rice should be slightly overcooked and sticky.

Off heat, stir in Parmigiano and 1 beaten egg. Spread on a tray to cool completely.

Take a spoonful of rice, press a mozzarella stick into the center, and form into an oval shape, sealing the cheese inside.

Roll in flour, dip in remaining beaten egg, and coat in breadcrumbs.

Deep fry at 180°C until deep golden, about 3-4 minutes.

Break one open to see the mozzarella stretch. Serve hot.
