Ingredients

  • 1 head cauliflower, riced
  • 1 lb shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1 cup mixed vegetables (like bell peppers and peas, keto-friendly)
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Preparation

Heat sesame oil in a large skillet over medium heat.

Add shrimp and cook until pink, then remove and set aside.

Scramble eggs in the skillet, then add riced cauliflower and vegetables.

Stir in soy sauce and cook for 5 minutes until cauliflower is tender.
