Ingredients

  • 4 cups cauliflower rice
  • 1 cup mixed vegetables (like peas and carrots, low-carb options)
  • 2 tablespoons sesame oil
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 2 green onions, chopped

Preparation

Heat sesame oil in a wok over medium heat.

Add shrimp and cook for 3-4 minutes until pink; remove and set aside.
