Ingredients

  • 2 large eggplants, sliced lengthwise
  • 1 lb ground beef
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup marinara sauce (sugar-free)
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Preparation

Preheat oven to 375°F (190°C).

Brush eggplant slices with olive oil, season, and grill until soft.

In a skillet, brown ground beef with garlic and Italian seasoning, then add marinara sauce.
