Ingredients

  • 2 cups flour
  • 4 eggs
  • 1/2 cup milk
  • Salt to taste
  • 2 tablespoons butter

Preparation

Whisk together the flour and salt in a bowl. Create a well in the center.

In a separate bowl, whisk together the eggs and milk. Pour the egg mixture into the flour well.

Mix everything together with a rubber spatula until the batter is smooth and resembles a thick pancake batter. Do not overmix.

Cover the batter and let it rest for 10–30 minutes.

Bring a large pot of salted water to a boil.

To form the spaetzle, you can use a spaetzle maker, a colander with large holes, or a potato ricer.

Pour a portion of the batter into your spaetzle tool and press it directly into the boiling water.

Once the spaetzle float to the surface (about 2–3 minutes), use a slotted spoon to remove them. You can transfer them to a baking sheet coated with cooking spray to prevent sticking.

In a large skillet, melt 4 tablespoons of butter. Add the boiled spaetzle and pan-fry for 2–3 minutes, or until lightly browned.

Garnish with fresh herbs and serve immediately.
