Ingredients

  • 2 pounds potatoes, boiled and sliced
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 1/4 cup apple cider vinegar
  • 2 tablespoons sugar
  • 1/4 cup chicken broth
  • Salt and pepper to taste
  • Chopped parsley for garnish

Preparation

Boil potatoes until tender, then slice them.

Cook bacon in a skillet until crisp, remove and set aside, leaving the fat.

Sauté onion in bacon fat until translucent.

Add vinegar, sugar, and broth to the skillet, bringing to a simmer.
