Ingredients

  • 2 medium acorn squashes, halved and seeded
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup maple syrup
  • 2 tablespoons butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg

Preparation

Preheat your oven to 400°F (200°C).

Cut the acorn squashes in half lengthwise and scoop out the seeds.

Brush the cut sides with olive oil and season with salt and pepper.

Place the squash halves cut-side down on a baking sheet lined with parchment paper.

Roast in the preheated oven for 30 minutes.

In a small bowl, mix together the maple syrup, melted butter, cinnamon, and nutmeg.

Flip the squash halves over, brush with the maple glaze, and return to the oven for another 10 minutes or until tender and caramelized.
