  • 4 cups fresh broccoli florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups vegetable or chicken broth
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded carrots (optional for extra veggies)
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg (optional)

Preparation

In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sauté until softened, about 5 minutes.
