Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 3 medium potatoes, peeled and diced
  • 1 bunch kale, stems removed and leaves chopped
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon red pepper flakes for heat

Preparation

Heat the olive oil in a large pot over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.

Add the diced onion and minced garlic to the pot. Cook until the onion is softened and translucent, about 3-4 minutes.

Pour in the chicken broth and water. Add the diced potatoes. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.

Stir in the chopped kale and optional red pepper flakes. Cook until the kale is wilted and tender, about 5 minutes.

Season with salt and pepper to taste. Serve hot.
