Ingredients

  • 4 large eggs
  • 1 cup fresh spinach leaves
  • 3 tablespoons ricotta cheese
  • 1 tablespoon olive oil
  • Pinch of salt
  • Pinch of black pepper

In a medium bowl, whisk together 4 large eggs with a pinch of salt and black pepper.

Heat 1 tablespoon of olive oil in a non-stick skillet (about 8 inches) over medium heat.

Add 1 cup of fresh spinach leaves and sauté for 1-2 minutes until wilted.

Pour the whisked eggs into the skillet, ensuring they spread evenly over the spinach.
