Chocolate Self-Saucing Pudding

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1 cup whole milk
  • 6 tbsp butter, melted
  • 3/4 cup dark brown sugar
  • 2 cups boiling water
  • 1/2 tsp kosher salt

Preparation

Whisk the flour, baking powder, granulated sugar, half the cocoa and the salt together.

Stir in the milk and melted butter to a thick batter and spread it in the buttered crock.

Mix the brown sugar with the remaining cocoa and scatter it evenly over the surface. Do not stir it in.

Pour the 2 cups boiling water gently over the back of a spoon across the whole surface. It will look ruined. It is not.

Cook on high 2 1/2 hours without lifting the lid once. Peeking here drops the temperature and the sponge sets heavy.

The top should be risen and cakey with sauce bubbling underneath.

Serve within 30 minutes — the sponge slowly drinks the sauce as it stands.
