Ingredients

  • 8 firm pears, peeled with stems on
  • 1 bottle dry red wine
  • 1 cup sugar
  • 2 cinnamon sticks
  • 6 cloves
  • 1 orange, zest in strips
  • 1 vanilla pod, split

Preparation

Peel the pears but leave the stems, and cut a flat base so each one stands upright.

Stand them snugly in the crock — packed tight they hold each other up and colour evenly.

Pour the wine over and add the sugar, cinnamon, cloves, orange zest and vanilla. The pears should be almost submerged.

Lay a round of parchment directly on the surface to keep the exposed tops from staying pale.

Cook on low 4 hours until a skewer slides in with slight resistance. Cooked to complete softness they collapse when lifted.

Lift the pears out, then reduce the poaching liquid in a wide pan for 15 minutes to a pourable syrup.

Serve warm or cold with the syrup spooned over.
