  • 20 oz fresh spinach, washed and chopped
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1/4 teaspoon nutmeg
  • 1/4 cup freshly grated Parmesan
  • Salt and pepper to taste

Preparation

In a large pot, melt butter over medium heat. Add onion and garlic, sauté until softened.

Add spinach in batches, wilting it down.

Stir in heavy cream, cream cheese, parmesan cheese, and nutmeg. Simmer for 5-7 minutes until thickened.

Season with salt and pepper. Serve hot.
