Ingredients

  • 6 firm apples, peeled and thick-sliced
  • 1 stick butter
  • 1 cup brown sugar
  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1 lemon

Preparation

Melt 3 tbsp butter in the skillet and cook the apples with 1/3 cup brown sugar over medium-high 10 minutes, until they release liquid and it reduces to a syrup.

Cooking the fruit down first is what separates a crisp from a soupy one. Do not skip to the oven.

Add the juice of the lemon and take the pan off the heat.

Rub the remaining cold butter into the oats, flour, remaining brown sugar, cinnamon and salt until it clumps.

Scatter the topping over the apples in loose handfuls, leaving gaps for steam to escape.

Bake at 375F for 30 minutes until the topping is browned and the fruit bubbles up at the edges.

Rest 10 minutes before serving — straight out of the oven it is molten and tastes of nothing but heat.
