Ingredients

  • 2 medium butternut squashes halved and seeded
  • 1 lb Italian sausage (mild or spicy)
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup chopped spinach or kale
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 tsp dried sage
  • Salt and pepper to taste
  • 2 tbsp olive oil

Preparation

Preheat the oven to 400°F (200°C).

Drizzle the butternut squash halves with olive oil, season with salt and pepper, and place them cut-side up on a baking sheet. Roast for 40-45 minutes until tender.

While the squash is roasting, heat a skillet over medium heat. Add the sausage and cook until browned, breaking it up with a spoon.

Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent, about 5 minutes.

Stir in the chopped spinach or kale, dried sage, and breadcrumbs. Cook for another 2-3 minutes until the greens wilt. Remove from heat and mix in half of the Parmesan cheese.

Once the squash is tender, scoop out some of the flesh from the center to create a cavity, leaving a border. Chop the scooped flesh and mix it into the sausage mixture.

Stuff the sausage mixture into the squash halves. Top with the remaining Parmesan cheese.

Return to the oven and bake for an additional 15 minutes until the cheese is melted and bubbly.
