For the dough

  • 2 and 1/4 cups all-purpose flour
  • 1 and 1/2 teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves or allspice
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup (12 tbsp) unsalted butter, softened to room temperature
  • 1/2 cup packed light or dark brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup unsulphured or dark molasses
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract

For rolling

  • 1/3 cup granulated or coarse sugar

Preparation

In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt. Set aside.

Using a stand mixer or in a large bowl using a handheld mixer, cream the softened butter and both sugars until combined (1-2 minutes).

Beat in the egg, molasses, and vanilla extract until well combined (1-2 minutes).

Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Don't overmix or cookies might get tough.

Cover dough tightly with aluminum foil or plastic wrap and chill for 1 hour. This makes it easier to handle and helps the cookies spread less.

Preheat oven to 350°F. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.

Remove cookie dough from the refrigerator. Scoop tablespoon-sized balls of dough, roll them in the additional sugar, and place them on the prepared baking sheets about 2 inches apart.

Roll each in granulated sugar and arrange 2-3 inches apart on the baking sheets.

Bake for 11-12 minutes, or until the edges are set but the centers are still soft. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
