Ingredients

  • 1 whole chicken, cut into 8 pieces
  • 400g canned San Marzano tomatoes
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, crushed
  • 100g black olives (Taggiasca or Kalamata)
  • 2 tablespoons capers, rinsed
  • 150ml dry white wine
  • 3 tablespoons extra virgin olive oil
  • 1 sprig fresh rosemary
  • Fresh oregano leaves
  • Salt and black pepper to taste

Preparation

Season chicken pieces generously with salt and pepper.

Heat olive oil in a large heavy pan. Brown chicken on all sides, about 8 minutes total. Remove and set aside.

In the same pan, sauté onion, bell pepper, and garlic until softened.

Deglaze with white wine and reduce by half.

Add tomatoes, olives, capers, rosemary, and oregano. Return the chicken to the pan.

Cover and simmer on low heat for 40 minutes until the chicken is cooked through and tender.

Serve with crusty bread to soak up the sauce.
