Ingredients

  • 1 ripe avocado, halved and pitted
  • 2 large eggs
  • Salt and pepper to taste
  • 1 tablespoon chopped chives (optional)
  • 1/4 cup shredded cheddar cheese

Preparation

Preheat the oven to 425°F (220°C).

Scoop out a little extra avocado from each half to make room for the egg.

Place the avocado halves in a baking dish to keep them stable.
