Spiced Apple Butter

Ingredients

  • 6 lb mixed apples, peeled and quartered
  • 1 1/2 cups brown sugar
  • 2 tbsp cider vinegar
  • 2 cinnamon sticks
  • 1 tsp ground clove
  • 1/2 tsp kosher salt
  • 1 lemon

Preparation

Quarter the apples rather than dicing them. Cut anything smaller and it disappears entirely over ten hours.

Add the sugar, vinegar, cinnamon sticks, clove and salt, and toss to coat. Add no water — apples release more than enough.

Cook on low 8 hours with the lid on, until the fruit collapses completely and darkens.

Fish out the cinnamon sticks and blend smooth with a stick blender.

Cook a further 2 hours with the lid propped ajar. This is the only time the lid comes off on purpose — the gap is what lets the water escape and the butter thicken.

It is ready when a spoonful mounded on a cold plate holds its shape without weeping liquid.

Finish with the juice of the lemon off the heat and jar while hot.
