Ingredients

  • 4 cans sweetened condensed milk, 14 oz each
  • boiling water to cover
  • 1/2 tsp flaky salt

Preparation

Remove the paper labels and lay the unopened cans on their sides in the crock so they cannot rattle upright.

Pour boiling water over until the cans are covered by a full 2 inches. This is the one rule that matters — a can that breaks the surface can overheat and burst.

Cook on low 8 hours, topping up with boiling water at the halfway point if the level has dropped.

Turn the cooker off and leave the cans in the water until completely cool. Opening a hot can sprays scalding caramel.

Open, scrape out, and beat smooth with the flaky salt.

Keeps three weeks refrigerated.
