Smothered Turkey Wings

Ingredients

  • 6 whole turkey wings, jointed
  • 3 onions, thickly sliced
  • 4 cups chicken stock
  • 1/3 cup all-purpose flour
  • 1/4 cup bacon fat
  • 1 tbsp seasoned salt
  • 2 tsp poultry seasoning
  • 1 tsp cayenne
  • 2 bay leaves

Preparation

Season the wings with the seasoned salt, poultry seasoning and cayenne, and leave them 20 minutes to take it up.

Brown them in the bacon fat until well coloured, then transfer to the crock.

Whisk the flour into the remaining fat and cook 3 minutes to a blond roux, then add the stock slowly, whisking smooth.

Pour the gravy over the wings, tuck the onions and bay leaves around them, and cook on low 8 hours.

The wings are ready when the meat pulls back from the joint and the drumette twists free.

Skim the fat and season again at the end. Long cooking flattens seasoning, and this dish needs correcting twice.
