  • 1 (12-14 pound) fresh whole turkey
  • Kosher salt and freshly ground black pepper
  • 1/2 cup unsalted butter, at room temperature
  • 1 shallot, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons fresh thyme leaves
  • 2 cloves garlic, minced
  • 1 sweet onion, quartered
  • 1/2 cup dry white wine
  • 1 1/2 cups turkey or chicken stock

Ingredients

  • 4 Tbsp Salted Butter
  • 6 Tbsp All purpose flour
  • 4 cups Turkey drippings
  • 1/4 cup white wine

Preparation

Melt the butter on low heat and add flour. Mix to make a roux.

While stirring, slowly add the turkey pan drippings into the mix.

Add the white wine, continuing to stir until the sauce has thickened (add more flour if needed)
